Acid and alkaline play an important role in the digestive system. Acidic foods form acidic condition in the body by lowering the ph level. Alkaline foods form alkali or base in the human body by increasing pH level. Acidic foods make blood, lymph, and saliva acidic whereas alkaline foods make blood, lymph and saliva are more alkalizing.

The pH level of the human body is determined through pH taste of saliva. The normal pH range for human saliva is 7.3 – 7.4.
